Potassium Tripolyphosphate (KTPP, K₅P₃O₁₀) is a versatile inorganic phosphate valued for its excellent chelating, dispersing, pH-buffering, and water-retention properties.
I. Food Industry (Primary Applications)
As a food additive, its main functions include quality improvement, water retention, and preservation.
Water-retention agent: Used in meat products (e.g., ham, sausages) and seafood (e.g., fish balls).
Chelating agent: Chelates metal ions such as calcium, magnesium, and iron to prevent fat oxidation and rancidity.
Emulsion stabilizer: Used in milk powder, cream, cheese, condensed milk, and plant-based protein beverages to enhance system stability.
pH regulator and buffer: Stabilizes the pH value of food products.
II. Agricultural Sector:
High-efficiency phosphorus-potassium compound fertilizer: Used directly as fertilizer or as a raw material for compound fertilizers; provides phosphorus (P) and potassium (K) nutrients to crops, promoting flowering and fruiting while enhancing stress resistance.
Soil conditioner: Chelates calcium, iron, and aluminum ions in the soil to prevent phosphorus fixation, thereby increasing nutrient availability and improving soil structure.
