I. Food Industry (Main Application)
As a food additive, its main functions are quality improvement, moisture retention, and preservation.
Moisture Retention Agent: Used in meat products and aquatic products such as ham, sausages, fish balls, and seafood. It binds to muscle protein, reducing water loss during cooking, keeping the meat tender and juicy, and increasing yield.
Chlorinating Agent: Chelates metal ions such as calcium, magnesium, and iron, preventing fat oxidation and rancidity, stabilizing food color and flavor, and extending shelf life.
Emulsifying Stabilizer: Used in milk powder, cream, cheese, condensed milk, and plant protein beverages to prevent oil-water separation and make the system more stable.
